These recipes are not standard recipes, I just write what I put over my pizza dough, the combinations made. My principle is .. put what you have in the fridge .. what is very important is the dough and the tomato sauce made at home. The rest depends on possibilities and imagination.
Dough: in a bowl sift the flour; In a cup I mixed the yeast (I only had dry but I prefer the fresh one) with a little fine salt and a little sugar and 2-3 tablespoons of warm milk, until it became creamy. I poured in the middle of the pile of flour and let the mayo grow a little. Then I kneaded with warm water until I got an elastic and suitable dough. Leave to rise covered with a towel for about 30 minutes.
In the meantime I did sauce: finely chop the onion and bell pepper and place in a pan with olive oil to soften well. When it has hardened, add the finely chopped canned tomatoes, crushed garlic, let it cook for 2 minutes with the onion and then add the canned juice, tomato paste, ketchup and possibly a little more broth. This combination of types of tomato sauces give this sauce a good flavor. Add 1 bay leaf, salt, pepper, oregano and let the sauce bind. Set aside to cool.
- The dough is divided into 4 round shapes, greased with olive oil or margarine. With the hands of olive oil, spread the dough evenly in molds and grease with sauce (generously). Add the ingredients as desired on top and sprinkle with grated cheese on top. Put in the hot oven.
